Every month we go on an adventure that spans the world of coffee. It’s an exciting time of year, because so many fresh coffees in from our favorite growing regions are in season and tasting fantastic. For our newest excursion, we’ve brought in a wonderful coffee from Narino Colombia, grown by Don Gildardo. This coffee is grown with care, and dried expertly in raised beds at Don Gildardo’s farm. These raised beds allow the coffee to be protected from the sun and rain, and to dry evenly. These are very important details for a great tasting cup of coffee.
Raised drying beds are widely considered the gold standard for drying delicious and clean specialty coffees- an important step that can absolutely go wrong for farmers with different methods when the weather does not cooperate. Don Gildardo is pictured above showcasing his raised and covered drying beds.
The remarkable thing about Narino Colombia is the climate. This particular region used to be famous for avocados and has largely been converted to coffee production. Coffee struggles to grow in these dryer conditions, and as a result the fruits are sweeter and more complex.
